WHY WHEAT
BLENDING TWO AMERICAN TRADITIONS
Although wheat is one of America’s most prominent grains, it remains largely untouched by most distillers. To us, that means opportunity. An arena in which we can continue exploring and innovating so that every bottle we put on the shelf is unlike anything else on the market.
Still rooted in the deep tradition of careful craft distilling, we are excited to push the boundaries of an emerging category of American whiskey.
Leading the Herd
Greg Metze, our Master Distiller, never takes the easy route. So, when he set out to make his own mark with wheat, he went all in, creating the highest wheat content mash bill he felt was right at 95% wheat, 5% malt.
The result is an entirely unique, yet delicate and approachable whiskey, celebrated for its sweet notes of fruit and spice.
It’s ahead of its time while still being born of tradition. And just like Greg and our Old Elk ethos, our wheat doesn’t cut any corners.
Worth The Wait
OF A SUPERIOR GRAIN
Our wheat whiskey is distilled using soft red winter wheat grown just east of the Mississippi. A wheat known for crafting a distinct smoothness and sweetness.
While many other wheat whiskeys are aged around 4 years, ours are aged at least 6. Some even longer. Our team has also found that when it comes to this unique mashbill, patience pays. Waiting longer and using the Slow-Cut® proofing method for every bottle, ensures that taste and integrity are never compromised—no matter how excited we are to share our latest creations.
DISTINCT IN THE DETAILS
Utilizing 5% malt in our wheat whiskey mash bill, Master Distiller Greg Metze maintained the traditions fans of Old Elk know and love. The presence of natural malted barley allows the cereal grain starch to appropriately break down into fermentable sugars.
